Starting on Feb. 13 and going into early March, you’ll be able to get your fix of kolaches during weekends at Union Market, the Washington City Paper reported.
What’s a kolache, you may be asking? The Czech pastry, which can be a snack or breakfast food, looks like a regular bread bun and is filled with either sweet fruit filling, like blueberry or savory filling, like JalapeƱo sausage and cheese.
Due to immigrant influence, the pastry is extremely popular in Texas, where Republic Kolache founders Brian Stanford and Chris Svetlik grew up. The pastries are even called the “National Pastry of Texas,” according to Republic Kolache’s website.
Another uniquely Texan item available to purchase at Republic Kolache is Topo Chico, a type of mineral water that is all the craze in hip cities like Austin. Topo Chico tastes kind of like LaCroix sparkling water, but more earthy and less fizzy.
Republic Kolache currently sells its pastries through the American Ice Co. located at 917 V St. NW.
