Hungry Hippo: Something wicked (delicious) this way comes

To show how much he loves the breakfast treat, executive chef Thierry Jugnet designed his restaurant like a giant waffle, with orange waffle grooved ceilings and orange square waffle tiles on the walls.

“All of this is Thierry’s thoughts and dreams from the ceilings to the tiles. It is all waffles,” said manager Deryck Mason.

At Wicked Waffle, Jugnet makes the lightest and tastiest waffles that can go with anything – but don’t ask for the two classic toppings. Their motto is “no syrup, no butter.”

Jugnet created Mosaic Cafe in Rockville, Md. years ago because he could not find the waffles his mom used to make growing up in Belgium. So he decided to create a restaurant to bring his waffles to Maryland and later D.C.  All of mosaic ingredients are freshly made every morning, including the lunch meats as their philosophy is fresh and local and no additives or preservatives.

I recommend both the Paprika and Parmesan Chicken Breast ($8.75) and the Turkey Croque monsieur ($7.75) on waffles. A croque, or the french grilled cheese, is either ham or turkey on bread with a gooey swiss cheese. While the French make their turkey croque open face, the Belgians do it right and cushion their swiss cheese and turkey between waffles.

The waffle itself is a light and fluffy, with a perfect crunch. The cheese is like a fondue – a combination of swiss cheese and a bechamel, a roux of flour, milk and butter often put in bisques for extra creaminess. The cooks add a few spices like nutmeg to bring out the turkey and swiss, but are still light enough to leave room for soups. (The turkey croque pairs well with the tomato pesto and coriander soup.)

The Paprika & Parmesan Chicken Breast is a perfect balance of flavor and fry. The chicken is tender and the fried cutlet adds texture but is still soft and ripe with flavor and the perfect balance of salt. The best part about the sandwich is the subtle lemon caper sauce that highlights the chicken and the waffle. This pairs well with the pureed wild mushroom and fresh herbs.
